Do you know... Why it's necessary to soak dried beans?
Well, first of all, it isn't necessary at all. Soaking beans reduces the cooking time and gives a creamer texture to the bean once it's cooked. Soaking affects the texture not the taste. I prefer to soak a large amount of beans, drain them, take out as much as I want, and then freeze the remaining. I often cook at the spur of the moment and having the beans pre soaked helps me to make a nice bean soup or chili in short order.
