Finally, the world of popcorn poppers joins the modern world of high-tech cookware. The finest cookware made uses a very special base metal which blends a thick aluminum core with a stainless steel layer on the inside. These two dissimilar metals are actually fused together to form a 2 or sometimes 3 "ply" material. The benefits of this have been proven out. First, Stainless steel alone is not a very good conductor of heat. Heat will travel through the metal at one point, but doesn't readily spread across the metal. Yet, stainless is a very desirable surface for cooking because it is non-reactive with acidic foods (unlike plain aluminum) and it is much easier to clean. Being a very hard surface, food and bacteria tend not to "stick" to the surface of stainless. That is why hospitals and restaurants use mostly stainless steel construction in critical areas of sanitation. Aluminum, on the other hand, conducts heat very well throughout the material, but being much softer and somewhat porous, cleaning is difficult. The perfect blend is the material putting these two together. A thick ply of aluminum on the outside and a layer of stainless where the food goes. Gold Medal is the only manufacturer of popcorn equipment to use this material in its "EZ Kleen" kettles. These won't turn black and are much easier to keep clean than any other popper in the world.
